Canadian Recipes

Are you looking for some Canadian recipes? Are you looking for something that is traditionally Canadian? While we were putting together our website on Ottawa the topic of traditional Canadian food kept coming up.

So, what is Canadian food? We asked our friends and family and we all agreed that Canada is well known for a few different foods: maple syrup and maple sugar, beaver tails (the sweet pastry, not the animal), tortiere, poutine, wheat and Alberta beef. There are other items of food as well but these were the ones that we thought were the most popular.

We decided that it would be a great idea to provide some recipes that we thought were very "Canadian".

We would like to thank Fulton's for the following delicious recipes. They all include a very traditional Canadian ingredient, maple syrup and/or maple sugar! Mmmmm...

Fulton's Maple Blueberry Coffee Cake

Topping:
¼ cup butter
1 cup Fulton’s maple sugar
2 tsp. cinnamon
Batter:
½ cup butter
¼ cup sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 package frozen or 2 cups fresh blueberries, mixed with ¼ cup Fulton's maple sugar
In a small bowl combine topping and set aside
In a large bowl cream butter and sugar until light and fluffy
Add eggs, blend well on low speed
Stir in sour cream and vanilla
Combine flour, baking powder, baking soda and salt, add to batter and blend well
Spread two thirds of batter into lightly greased 9" spring form or tube pan
Top with blueberry mixture
Spread remaining batter evenly over filling
Sprinkle with topping
Bake at 350F for 1 hour or until done
Substitute raspberries, strawberries or rhubarb for the blueberries.


Maple Butter Tarts


Preheat oven to 375 F.


Prepare sufficient pastry and roll out on floured surface. Cut with floured cookie cutter and line 12 medium sized muffin cups. Do not prick.
Cover with boiling water:
½ cup raisins
Let stand until plumped and then drain.
Arrange in tart shells.


Mix together:
¼ cup butter or margarine
½ cup maple or lightly packed brown sugar
2 tbsp. flour


Stir in:
1 cup Fulton's maple syrup
2 eggs, slightly beaten
¼ tsp. salt
1 tsp. vanilla


Combine just until blended. Spoon into unbaked tart shells, filling each about 2/3 full. Bake in preheated 375 F. oven for about 20 minutes.
Tarts are done when puffed up in center and nicely browned. Do not allow filling to bubble over.
Makes 12 tarts or a few more if using store bought 2" tart shells.


Maple Chicken Wings
Ingredients:
1 to 4 pounds chicken wings
1/3 cup teriyaki sauce
½ cup lite soy sauce
1 tbls minced garlic
1 tbls. Garlic powder
1 tbls. Onion powder
½ tables black pepper
1 to 2 cups Fulton's maple syrup


Preheat oven to 350° F
Remove wing tips and snip the skin between the joints. Place in disposable large baking pan. Add the maple syrup, soy sauce, teriyaki sauce, garlic, garlic powder, onion powder, and black pepper. Toss to coat.
Place pan on baking sheet and bake for approximately 1 hour, tossing every 15 to 20 min. the liquid will gradually evaporate the longer you cook it.
After 1 hour, increase the oven temperature to 425° F . Turn wings to coat evenly and cook on additional 45 min.
Serves 4-6 Prep. 15 min. Cooking time 1 hour 45 min.


Tangy Maple Meatballs


Meatballs:
½ lb ground beef
½ lb ground pork
¼ cup chopped onion
1 egg
2 tbsp dried parsley flakes
1 tsp Worcestershire Sauce
½ tsp. Salt
1/8 tsp. Pepper
Sauce:
1 tbsp. cornstarch
1 tsp. Dry mustard
¼ tsp. Salt
1 tbsp. vinegar
½ cup Fulton's Maple Syrup
¼ cup water
Combine ground meats, egg, parsley, Worcestershire sauce, ½ tsp. Salt and pepper. Form into 1 ½" balls. Place in 8" square pan. Bake at 350 F for 20 minutes.
Meanwhile, combine cornstarch, dry mustard and remaining salt in small saucepan. Gradually stir in vinegar, syrup and water. Cook and stir until thickened and bubbly.
Drain fat from meatballs and pour sauce over them. Return to oven and bake 20 minutes longer.
Makes 4 servings.


Maple Pumpkin Pie
Ingredients:
1 cup pumpkin
1 tbsp cornstarch
½ tsp. Cinnamon
¼ tsp. Salt
½ cup milk
1 tbsp. butter
2 eggs, beaten
½ tsp. Nutmeg
1 1/3 cups Fulton's Maple Syrup
1/3 cup sugar


Beat cooked pumpkin.
Sift into this mixture cornstarch, cinnamon, nutmeg, sugar and salt. Mix thoroughly.
Add melted butter, milk and Fulton's Maple Syrup and mix.
Stir beaten eggs into filling.
Pour into a 9-10" pie shell and bake 15 minutes at 450 degrees and then lower oven to 325 degrees and continue baking for 40 minutes or until done.


Maple Carrot Soup


Ingredients:
½ cup chopped onions
2 cups thinly sliced carrots
1 tbsp. Chicken Bouillon
3 cups water
½ cup uncooked rice
¼ cup Fulton's Maple Syrup
½ tsp. Salt
2 cups milk


Mix onion, carrots, bouillon mix, water, rice, Fulton's maple syrup and salt in a saucepan. Bring to a boil. Reduce heat, cover and simmer until carrots are tender and rice is cooked.
Place in a blender and blend until smooth. Return to the saucepan heat while stirring in the milk.
Add maple croutons and enjoy.


Maple Croutons:
1 pkg. of Fulton's Maple Dip for Vegetables
6 slices of bread
Cut small maple shapes from the slices of bread.
Place 1 tbsp. of the Fulton's Maple Dip mix in a small paper bag. Place bread shapes into the bag. Shake well.
Bake in 375 oven for 3 min. each side.
